Ingredients
- 1 lb ground beef
- 1/2 cup bread crumbs
- 1/4 cup milk
- 1/4 cup finely chopped onion
- 1 egg
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 4 cups beef broth
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 cup diced potatoes
- 1/2 cup heavy cream
- Fresh parsley for garnish
Instructions
- In a large mixing bowl, combine the ground beef, bread crumbs, milk, onion, egg, salt, black pepper, and nutmeg. Mix until well combined.
- Shape the mixture into small meatballs, about 1 inch in diameter.
- In a large pot, heat some oil over medium heat. Add the meatballs and cook until browned on all sides. Remove the meatballs from the pot and set aside.
- In the same pot, add the carrots, celery, and potatoes. Cook for 5 minutes, until slightly softened.
- Pour in the beef broth and bring to a boil. Reduce heat to low and simmer for 15 minutes.
- Add the meatballs back to the pot and stir in the heavy cream. Simmer for an additional 5 minutes.
- Serve the soup hot, garnished with fresh parsley.
