Chef Sven's Simple and Delicious Pasta Carbonara Recipe

Today, I want to share with you one of my all-time favorite recipes: Pasta Carbonara. This classic Italian dish is a perfect combination of creamy sauce, crispy bacon, and al dente pasta. It’s simple to make but will impress even the pickiest eaters.
I first discovered this recipe during my culinary adventures in Italy. I was invited to a small trattoria in Rome, where the chef, Nonna Sofia, shared her secret recipe with me. Nonna Sofia was a true master in the kitchen, and her Pasta Carbonara was legendary.
Now, let’s get cooking!
Ingredients:
- 8 ounces spaghetti
- 4 slices bacon, diced
- 2 cloves garlic, minced
- 2 large eggs
- 1/2 cup grated Parmesan cheese
- Freshly ground black pepper
- Chopped fresh parsley, for garnish
Instructions:
- Cook the spaghetti according to the package instructions until al dente. Drain and set aside.
- In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon from the skillet and set aside, leaving the bacon drippings in the skillet.
- In the same skillet, add the minced garlic and cook until fragrant, about 1 minute.
- In a medium bowl, whisk together the eggs and Parmesan cheese. Season with black pepper.
- Add the cooked spaghetti to the skillet with the garlic and toss to coat in the bacon drippings. Remove the skillet from the heat.
- Slowly pour the egg mixture over the spaghetti, stirring constantly to coat the pasta evenly.
- Return the skillet to low heat and cook, stirring constantly, until the sauce thickens and coats the pasta, about 2 minutes. Be careful not to overcook the eggs.
- Remove the skillet from the heat and stir in the crispy bacon.
- Serve the Pasta Carbonara immediately, garnished with chopped fresh parsley.
