Remove the chicken pieces from the buttermilk marinade, allowing any excess marinade to drip off. Dredge the chicken in the flour mixture, coating it well on all sides. Place the coated chicken on a wire rack and let it sit for 10 minutes to allow the coating to set.

  3. Heat vegetable oil in a large skillet or Dutch oven over medium-high heat. The oil should be about 1 inch deep. To test if the oil is hot enough, drop a small piece of bread into the oil. If it sizzles and turns golden brown in 30 seconds, the oil is ready.
