Ingredients
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves of garlic, minced
- 3 carrots, sliced
- 3 celery stalks, sliced
- 6 cups chicken broth
- 1 bay leaf
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 2 cups egg noodles
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until fragrant.
- Add the chicken breasts to the pot and cook until they are no longer pink in the center.
- Remove the chicken from the pot and shred it into bite-sized pieces.
- Return the shredded chicken to the pot, along with the sliced carrots, celery, chicken broth, bay leaf, dried thyme, and dried parsley.
- Bring the soup to a boil, then reduce the heat and simmer for about 20 minutes, or until the vegetables are tender.
- Add the egg noodles to the pot and cook for an additional 8-10 minutes, or until they are al dente.
- Season the soup with salt and pepper to taste.
- Remove the bay leaf before serving.
