Introduction
Roast chicken is an absolute classic, and for good reason. There’s something undeniably comforting about a perfectly roasted bird, with its crispy skin and tender, flavorful meat. But achieving that perfection can be a challenge. That’s why I’m here to guide you through the process step by step, ensuring that your roast chicken is a triumph every time.
Ingredients
- 1 whole chicken (about 4-5 pounds)
- 2 tablespoons olive oil
- 1 tablespoon salt
- 1 teaspoon black pepper
- 1 lemon, cut in half
- 4 cloves garlic, peeled
- 1 sprig fresh rosemary
Instructions
- Preheat your oven to 425°F (220°C).
- Pat the chicken dry with paper towels, inside and out. This will help the skin crisp up while it roasts.
- Rub the chicken all over with olive oil, then season generously with salt and black pepper.
- Place the lemon halves, garlic cloves, and rosemary sprig in the cavity of the chicken.
- Tie the legs together with kitchen twine. This will help the chicken cook evenly.
- Place the chicken in a roasting pan, breast side up. If you don’t have a roasting pan, a baking dish will work just fine.
- Roast the chicken in the preheated oven for about 1 hour, or until the internal temperature reaches 165°F (74°C). To check the temperature, insert a meat thermometer into the thickest part of the thigh without touching the bone.
- Remove the chicken from the oven and let it rest for 10-15 minutes before carving. This will allow the juices to redistribute and the meat to become even more tender.
- Carve the chicken and serve with your favorite sides. Enjoy!
