Roast chicken is an absolute classic, and for good reason. There’s something undeniably comforting about a perfectly roasted bird, with its crispy skin and tender, flavorful meat. But achieving that perfection can be a challenge. That’s why I’m here to guide you through the process step by step, ensuring that your roast chicken is a triumph every time.

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken dry with paper towels, inside and out. This will help the skin crisp up while it roasts.
  3. Rub the chicken all over with olive oil, then season generously with salt and black pepper.
  4. Place the lemon halves, garlic cloves, and rosemary sprig in the cavity of the chicken.
  5. Tie the legs together with kitchen twine. This will help the chicken cook evenly.
  6. Place the chicken in a roasting pan, breast side up. If you don’t have a roasting pan, a baking dish will work just fine.
  7. Roast the chicken in the preheated oven for about 1 hour, or until the internal temperature reaches 165°F (74°C). To check the temperature, insert a meat thermometer into the thickest part of the thigh without touching the bone.
  8. Remove the chicken from the oven and let it rest for 10-15 minutes before carving. This will allow the juices to redistribute and the meat to become even more tender.
