Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves of garlic, minced
- 2 cans (28 ounces each) crushed tomatoes
- 1 can (14.5 ounces) vegetable broth
- 1 teaspoon sugar
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 bay leaf
- Salt and pepper to taste
- 1/2 cup heavy cream (optional)
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until softened, about 5 minutes.
- Add the crushed tomatoes, vegetable broth, sugar, dried basil, dried oregano, bay leaf, salt, and pepper to the pot. Stir to combine.
- Bring the mixture to a simmer, then reduce the heat to low. Cover the pot with a lid and let the soup simmer for 20-30 minutes to allow the flavors to meld together.
- Remove the bay leaf from the pot. Use an immersion blender to puree the soup until smooth, or transfer the soup to a blender and blend in batches until smooth.
