Today, I am going to share with you one of my all-time favorite recipes: Chef Sven’s Famous Meatball Soup. This hearty and comforting soup is packed with tender meatballs, vegetables, and flavorful broth. It’s the perfect meal for a cozy night at home or a chilly winter day.

Growing up in Sweden, meatball soup was a staple in my family’s kitchen. My grandmother would spend hours rolling the perfect meatballs and simmering them in a rich broth. The aroma that filled the house was absolutely heavenly.

  3. Heat the olive oil in a large pot over medium heat. Add the onion, carrots, and celery. Cook until the vegetables are tender, about 5 minutes.
  4. Add the beef broth, diced tomatoes, bay leaf, and salt and pepper to taste. Bring to a simmer.
  5. Carefully drop the meatballs into the simmering broth. Cook for 10 minutes, or until the meatballs are cooked through.
  6. Remove the bay leaf from the soup.
  7. Ladle the soup into bowls and garnish with fresh parsley.
