Chef Sven’s Easy Homemade Meatball Soup Recipe
Soup is always a comforting meal, and my homemade meatball soup is no exception. The combination of flavorful meatballs, hearty vegetables, and savory broth is simply irresistible. Ingredients
- 1 lb ground beef
- 1/2 cup bread crumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup finely chopped parsley
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
- 4 cups beef broth
- 1 cup water
- 1 carrot, diced
- 1 celery stalk, diced
- 1 onion, diced
- 1/2 cup cooked pasta
Instructions
- In a large bowl, combine the ground beef, bread crumbs, Parmesan cheese, parsley, garlic powder, onion powder, dried thyme, salt, and pepper. Mix well until all the ingredients are evenly incorporated.
- Roll the mixture into small meatballs, about 1 inch in diameter.
- In a large pot, heat some oil over medium heat. Add the meatballs and cook until browned on all sides, about 5 minutes.
- Remove the meatballs from the pot and set them aside.
- In the same pot, add the carrot, celery, and onion. Cook until the vegetables are tender, about 5 minutes.
- Add the beef broth and water to the pot. Bring to a boil.
- Reduce the heat and add the cooked meatballs to the pot. Simmer for 10 minutes.
- Stir in the cooked pasta and simmer for an additional 5 minutes.
- Season with salt and pepper to taste.
